City Focus: Lettüs slow life cafe in San Francisco

While Slow Food eateries are becoming increasingly popular, most are far from being able to take on the big Fast Food giants whose chains still dominate our streets. Or are they? San Francisco based organic café Lettüs aims to do exactly this, tackle the big guys and fundamentally change the way we eat out.

Lettüs’s menu is -  following the Slow Food principles - almost entirely organic and uses mainly what is available from resources. From salads to pasta dishes, pizzas and burgers, all made to include as much nutritional value as possible, there are plenty of popular dishes to choose from.

But the Slow Life philosophy goes far beyond the menu. The cafe’s design was put together following green standards but deliberately looks more mainstream than some other organic cafes. “The earthier places are great, but a lot of their clientele already eats this way,” co-founder Guelke says. “We wanted to make a place that caters more to the mainstream, where people come in because of the design of the space and the kinds of dishes we’re offering.”

So what’s next? Co-founder Lewis envisions a near future when organic cafés are as prolific as fast-food chains. “That’s how we’ll change the way the world eats,” he says. “It’s not by having one great restaurant—it’s by having one on every block.” We’d certainly love to have our very own branch of Lettüs coming to a street near us soon!
